Breakfast craving

So first off, let me say that this post has nothing to do with the oven or 2 am.  I haven't been baking lately because i have a VERY messy kitchen and a ton of dirty dishes that I will be washing today.
Yeah, those are dirty dishes and spices I havent put away.  I actually just got them so that I could try my hand at homemade soyrizo.

Now on to breakfast

I watched a movie called Breakfast Special this morning and I was inspired to go out to breakfast.  I started searching on Yelp.com to figure out someplace new to try but soon realized that I didnt really feel like eating breakfast alone, in public.  So I decided to make my own breakfast and what I wanted was chilaquiles.
I knew that I had a ton of corn tortillas (I think it is the law in S.P. to only sell corn tortillas in packs of 50 or more) so I could make my own chips and I had leftover red chile sauce that I had frozen a couple weeks ago. So I wandered into my mess of a kitchen, donned my new apron and got to work.

RECIPE:

4 corn tortillas
4 icecubes of frozen red chile sauce
a spoonful of tomato paste - to cut down the spice a little
shredded jack cheese

Cut the tortillas into wedges  8 per tortilla.  Fry them up in some hot oil.  When crispy and browned, throw 'em on a papertowel covered plate and salt them right away.
Add the ice cubes of sauce, a spoonful of tomato paste and a little bit of water (so the tomato paste doesnt burn before the ice cubes melt) and cook it down for a few minutes.
Add the tortilla chips back into the pan. Toss to coat. Plate and then top with cheese.

I also made scrambled eggs (with soyrizo in them) to put on the side.

RESULT:

These were so good!  They really hit the spot and because they were so quick and easy I will be adding them to my standard repertoire of cooking.  You should go make them now.  You wont be sorry.

Mock Chocolate Chip Croissants

I used this recipe from a cookbook my friend won at the book auction at the library book sale yesterday.  The cookbook was a chocolate dessert cookbook, but I must say that these arent that chocolatey.

They turned out ok.  I would spread the almond paste mix up the dough so that it is spread throughout the roll but other then that they are super EASY and quick.  You can bake them up without much trouble and use things that you have in the kitchen.  I bet Nutella would be awesome in these if you dont have almond paste on hand. (Confession: the almond paste was from a friend.  I dont have almond paste in my cupboard, ever.)

Un-baking at 10pm

Today was a very hot day in sunny Southern California.  Too hot to turn on an oven and therefore too hot to bake. What is a girl to do in this situation when baking ingredients are calling her name?

RAW DESSERT!

I bought some amazing dates at the farmer's market this weekend and figured that I would make a raw pie crust with them.  Strawberries are also in season (when arent they 'round these parts?) so this evening I whipped up a strawberry creme pie.

I have one of Ani Phyo's raw cookbooks and knew that there were some pie recipes in there, but I couldn't find my copy.  I searched the internet and came up with some different recipes, most of which involved soaking cashews (which I hate) for 2 hours and making a cashew creme. Well, I said no way to that time consuming idea and decided to just wing it. Here is what I came up with.

Crust:  hazelnuts, almonds, dates, pinch of salt all blended in the food processor.
Filling: strawberries, coconut oil, raw agave syrup, the rest of a pack of almond meal all blended in the Super Awesome Powerhouse Blender (VitaMix baby!)

Smash the crust in a pie pan. Pour the filling in. Put it in the fridge to set up.

I had a small amount of all of this that didnt fit in the pan, so I got some cupcake liners and made 3 mini cupcake pies. I put them in the freezer and am hoping that they turn out like ice cream.

Yeah, they turned out pretty good. So pretty and hot pink.

Mmm, they were tasty too.
