leads to too many dishes!!
Tonight the menu included:
Pizza with white sauce, mushrooms, sun-dried tomatoes and spinach with asiago and mozzarella cheese - for my own dinner. (Shared with the current shows stage manager with enough left over for breakfast)
- Artichoke dip with green chilies. It is too thick and cheesy for me. I think I will add some milk and maybe some herbed olive oil before I serve it tomorrow.
- vegan blondies with chocolate chips. These are sooo good and I make them all the time. In fact the recipe I use just has the ingrediants on it and a large oil stain in the middle so the ink is smeared and hard to read. I am glad I have it mostly memorized.
For fun here is the recipe that I use for the blondies. It is Isa's (from PPK) recipe.
1 1/4 c. flour
3/4 tsp baking soda
1/2 tsp salt
a vanilla soy yogurt
a bit more then a 1/4 c. canola oil
1 Tbsp vanilla
2 Tbsp molasses
a bit more then 1 c. sugar
3/4 c. chocolate chips
Mix the dry ingredients together.
Mix the wet ingredients together.
Add the sugar to the wet ingredients.
Mix the dry stuff into the wet.
Add chocolate chips.
Bake in a 8x8 pan (I line it with parchment first)
350 deg. for 30 - 35 minutes.
Done and delicious.

Sleep eluding me
I bake
Mind reeling,
Body restless and numb
I cook dinners, 2 -3 at a time
ready to assemble when
I am not willing my eyes to close.
Sugar and flour
and more almond milk then you would expect
Heated kitchen and hotter oven
by the time the timer shrieks,
I can barely keep my eyes open
Cookies out,
gravies thickened
muffins spilling over their cups
I am ready to dream
of the luscious breakfast
that awaits me in the morning.
Vegan Blueberry Nutmeg breakfast muffins
I found a new cookbook and have decided that I must own it. Vegan Diner has good recipes with standard ingredients. It supplied the recipe for these (as well as a great vegan country gravy that was pretty close to the standard meat version. Buy the book. Try it out. You won't be sorry.)
Now on to the muffins.
These were pretty quick to make. I woke up at 6:30 and didn't feel like going to work so early so I decided to bake up some breakfast. Flax meal is the only non-standard ingredient in them. The recipe called for a cup of berries and I had a package with more, so I just threw them all in them. They ended up being more berry then muffin. Still delicious, if you like berries, and if not, why make these?
I am adding them to my everyday recipes - meaning that I will make them again and probably pretty frequently.

3:30 am low sugar insomnia cookies
| Low sugar chocolate chip cookies - made with sleep in mind |
It was one of my good friend's birthdays yesterday and we are going to the movies tonight. I confess that I didn't get her a present, so I decided to make her favorite low sugar chocolate chip cookies.
I got the recipe from so diabetic dessert cookbook and it only calls for 3/4 cup of brown sugar and 1 1/2 cup of flour. I used a combination of whole wheat pastry flour and all-purpose. They are the easiest and fastest cookies. The recipe is the perfect size, only requiring 2 cookie sheets worth of time. Love it.
The cookies are cooling on a baking rack and I will bag them up tomorrow to deliver as a tasty birthday treat.
Now, I wonder if sleep is ready for me to catch it.

Breakfast craving
So first off, let me say that this post has nothing to do with the oven or 2 am. I haven't been baking lately because i have a VERY messy kitchen and a ton of dirty dishes that I will be washing today.
Yeah, those are dirty dishes and spices I havent put away. I actually just got them so that I could try my hand at homemade soyrizo.
Now on to breakfast
I watched a movie called Breakfast Special this morning and I was inspired to go out to breakfast. I started searching on Yelp.com to figure out someplace new to try but soon realized that I didnt really feel like eating breakfast alone, in public. So I decided to make my own breakfast and what I wanted was chilaquiles.
I knew that I had a ton of corn tortillas (I think it is the law in S.P. to only sell corn tortillas in packs of 50 or more) so I could make my own chips and I had leftover red chile sauce that I had frozen a couple weeks ago. So I wandered into my mess of a kitchen, donned my new apron and got to work.
RECIPE:
4 corn tortillas
4 icecubes of frozen red chile sauce
a spoonful of tomato paste - to cut down the spice a little
shredded jack cheese
Cut the tortillas into wedges 8 per tortilla. Fry them up in some hot oil. When crispy and browned, throw 'em on a papertowel covered plate and salt them right away.
Add the ice cubes of sauce, a spoonful of tomato paste and a little bit of water (so the tomato paste doesnt burn before the ice cubes melt) and cook it down for a few minutes.
Add the tortilla chips back into the pan. Toss to coat. Plate and then top with cheese.
I also made scrambled eggs (with soyrizo in them) to put on the side.
RESULT:
These were so good! They really hit the spot and because they were so quick and easy I will be adding them to my standard repertoire of cooking. You should go make them now. You wont be sorry.
