Orange chocolate chip bread pudding

Mmmm.  I made this for my final cast party.  It was a huge hit.  I have a few oranges left and am going to make it again soon.  In the meantime, this is the RECIPE I used (pre-tweaks).

3:30 am low sugar insomnia cookies

Low sugar chocolate chip cookies - made with sleep in mind
I was unable to fall asleep, so I got up and decided to make cookies.  I donned my late night baking attire - a skeleton apron - and got to mixing.

It was one of my good friend's birthdays yesterday and we are going to the movies tonight. I confess that I didn't get her a present, so I decided to make her favorite low sugar chocolate chip cookies.

I got the recipe from so diabetic dessert cookbook and it only calls for 3/4 cup of brown sugar and 1 1/2 cup of flour.  I used a combination of whole wheat pastry flour and all-purpose.  They are the easiest and fastest cookies.  The recipe is the perfect size, only requiring 2 cookie sheets worth of time. Love it.

So I mixed it all the ingredients together, spooned 'em out onto a parchment-lined cookie sheet, set my new AWESOME mouse and cheese timer, and Voila!

The cookies are cooling on a baking rack and I will bag them up tomorrow to deliver as a tasty birthday treat.

Now, I wonder if sleep is ready for me to catch it.
